- 1 can of chunk light albacore tuna, water drained
- ¼ of a red onion, chopped
- ½ cup heirloom or cherry tomatoes, quartered
- 1 Tbsp. olive oil
- Salt and pepper to taste
- 1 medium avocado, halved, de-seeded and peeled
- 1 Tbsp. lemon juice
Brush lemon juice on all surfaces of both halves of the avocado. Set aside. In a bowl, add the tuna and use a fork to break up large chunks. Add onion, olive oil, and any remaining lemon juice, and mix together. Season to taste with salt and pepper. Spoon mixture into each avocado half. Add sliced tomatoes, garnish as desired and then serve immediately.
