Serving Size: 2
- 1 ripe avocado, pitted, peeled, sliced
- Juice from 1/2 lemon
- 1/2 cup cranberries
- 1-2 white turnips, parsnip or daikon, thinly sliced, cut into small stars
- A medium slice of smoked salmon, cut in small strips + 1 star
- 2 Tbsp. olive oil
- A few drops of balsamic vinegar
Brush slices of avocado with lemon juice. Arrange on salad plates to look like a Christmas tree (see image). Roll small slices of smoked salmon and place strategically on “branches” of avocado slices. Decorate plate with cranberries, white turnip, parsnip or daikon stars, and dot the plate using a mixture of olive oil and balsamic vinegar to accent. Serve chilled.
