Serves  2

1 Beefsteak tomato, sliced thick

1/2 cup leafy greens (baby spinach and arugula shown)

Mushrooms

Ingredients

  • 4 portobello mushrooms

  • 1 Tbsp. olive oil

  • Salt and pepper 

  • Sesame seeds, optional

Instructions

  1. Preheat oven to 450 degrees. 

  2. Remove the gills from the mushroom. Brush mushrooms with olive oil and sprinkle with salt. 

  3. Roast for 10-12 minutes until mushrooms are tender.

Cashew Cheese

Cashew Ingredients

  • 1/2 cup cashews soaked in 1.5 cups of water for at least 1 hour. 

  • 1 tsp. lemon juice 

  • 1/4 tsp. salt 

  • dash black pepper

  • 2 Tbsp. water 

Instructions

  1. Soak, drain, and rinse cashews.

  2. Place in a food processor or blender along with lemon juice and salt.

  3. Pulse or blend for a minute to combine ingredients.

  4. Add water and process until completely smooth, about 3 minutes.

Guacamole

Ingredients

  • 1 avocado, seeded and peeled

  • 1/2 Tbsp. lemon juice

  • 1 clove garlic, crushed

  • 1/4 tomato, finely chopped

  • 2 Tbsp. onion, finely chopped 

  • Salt to taste

Instructions

  1. Mash avocado with a fork and mix in lemon juice and garlic. 

  2. Stir in remaining ingredients and set aside.

Burger Assembly 

  1. Stack guacamole, sliced tomato, greens, and cashew cheese on one of the mushroom buns.

  2. Top with another mushroom bun.

  3. Sprinkle sesame seeds over the top as desired.

  4. Serve immediately.

Animal Style Burger with Avocado - Paleo & Low Carb

Paleo – Low Carb  

Serves 2

Ingredients

  • 1 lb. ground beef

  • 1/4 cup steak sauce

  • 1 avocado, sliced

  • 1/2  red onion, sliced

  • 1/2  tomato, sliced

  • 1/4  head of iceberg lettuce

  • Salt and pepper to taste

Instructions

  • Combine ground beef, steak sauce, salt, and pepper into a medium bowl. Mix well.

  • Form into two patties.

  • Place on a wire rack inside of a foil-lined baking sheet.

  • Broil at 450 degrees for 3-4 minutes per side.

  • Using part of the lettuce as the lower bun, stack the onion, broiled beef patty, avocado slices, and tomatoes, and then top with more lettuce.

  • Devour immediately.

Stacked BBQ Burger with Avocado

Ingredients

  • 1 lb. ground beef

  • 1/2 cup barbeque sauce 

  • 1 avocado, sliced

  • 1 tomato, sliced

  • 1/2 cup leafy greens

  • 1/4 cup mayonnaise

  • 2 large seeded buns

  • Salt and pepper to taste

Instructions

  • Combine ground beef, salt and pepper, and half of the barbeque sauce into a medium bowl and mix well.

  • Form into two patties.

  • Grill on a barbeque over hot coals or broil at 450 degrees for 3-4 minutes per side. Check the internal temperature for the desired doneness.

  • On the bottom bun, layer on avocado slices, beef patty, mayonnaise, barbeque sauce, greens, and tomatoes, then add the top bun.

  • Serve immediately. Note: because of the thickness of this burger, it may be best to cut in half before attempting to eat.

Cocoa Avocado Pancakes

Serves 2

Ingredients

  • 1 avocado, peeled & seeded

  • 1/2 banana

  • 1 1/2 cups oats 

  • 1/4 cup cocoa powder

  • 1/4 cup maple syrup

  • 1/4 tsp. vanilla extract

  • 1/8 tsp. ground cinnamon

  • 1 egg 

  • 1 cup milk 

  • 2 tsp. baking powder

Instructions

  1. Add all ingredients into a food processor and blend.

  2. Grease griddle or pan and place on medium heat.

  3. Spoon batter onto griddle/pan cook pancake for about two minutes on one side. 

  4. Flip the pancake and cook for another minute on the other side, or until done. 

  5. Serve immediately topped with favorite fruit and nuts and drizzled with syrup of choice.

Iced Avocado Cake

Ingredients

Cake

  • 2 avocados, mashed4 eggs1 cup sugar

  • 1 tsp. vanilla extract1 Tbsp. baking powder1 cup flour

  • 1/8 tsp. salt

Icing

  • 1 cup confectioner’s sugar

  • 3 tbsp. lemon juice

  • 1 cup strawberries, halved

Instructions

  1. Mix the eggs, sugar, vanilla, and mashed avocados together. 

  2. Add the baking powder and flour and continue mixing. 

  3. Line an 11-inch loaf pan with parchment paper. 

  4. Transfer the avocado mixture into the pan and bake for 40-45 minutes at 350⁰F.

  5. Allow cake to cool on a rack.

  6. Add the confectioner’s sugar and lemon juice to a smaller bowl. 

  7. Mix until smooth using a teaspoon. Glaze the avocado loaf, then garnish with strawberries.
