Spinach, Avocado & Tangerine Salad

Serving Size: 2 (4 shown)


  • 1 (6-ounce) bag baby spinach (about 6 cups), washed, dried and stems removed
  • 2 tangerines, peeled and sectioned
  • 1 large avocado, peeled, seeded and cubed
  • 1/2 cup walnuts, coarsely chopped
  • 1/2 cup almonds, coarsely chopped
  • 1/3 cup pomegranate seeds


  • 1/2 cup olive oil
  • 2 Tbsp. white wine vinegar
  • 1 Tbsp. fresh lemon juice
  • 1 Tbsp. fresh orange juice
  • Kosher salt and freshly ground black pepper, to taste


Whisk together all ingredients for the dressing and set aside. Add all other ingredients in a large bowl, drizzle with dressing and toss along to coat evenly. Serve chilled.
