Avocado Egg Salad (Sandwiches)


Serving Size: 2


  • 7-8 hardboiled eggs, chopped
  • 1 large ripe avocado, chopped 
  • 1/4 cup light mayonnaise
  • 1 tsp. lemon juice 
  • 2 Tbsp. green onions, chopped
  • 1/2 tsp. Dijon mustard
  • 1/4 tsp. paprika 
  • Salt and pepper, to taste


Combine eggs, mayonnaise, lemon juice, green onions, mustard, paprika, and salt and pepper in a bowl. Add avocado and combine into egg salad mixture. Spread onto crackers or your favorite bread topped with sandwich ingredients (shown here with lettuce). Munch away!
