Avo Lox on Rye

Serving Size: 2


  • 1 ripe avocado, pitted, peeled, sliced
  • 2 hardboiled eggs, sliced (optional)
  • 1/4 cucumber, thinly sliced
  • 2 slices smoked salmon
  • 2 slices of rye bread, toasted
  • Juice of 1/2 lemon
  • 3 Tbsp. olive oil
  • Pinch of sea salt
  • 2 sprigs of dill (optional)


Mix olive oil and lemon juice - set aside. Add slices of avocado on top of rye toast and drizzle with lemon olive oil mixture. Layer on slices of eggs, cucumber, and salmon. Top with a sprig of dill and a pinch of sea salt. Serve immediately.
